Beijing food is wheat, roast, and street-snack heavy: Peking duck is carved into thin pancakes with scallion, cucumber, and sweet bean sauce, zhajiangmian covers noodles with soybean-paste pork sauce, and jianbing folds egg, herbs, and crisp cracker into a breakfast crepe.
